Curried Hummus

Fresh lemon juice brightens the flavors of this garlic and curry hummus. Chick peas have a very low glycemic index, which means they create steady blood sugar and are especially healthful for diabetics. Curry powder contains curcumin, an antioxidant believed to be anti-inflammatory and anti-cancer. So, not only is this delicious, but it is good for you!

Yield

2 cups (16 servings)

Ingredients

2 (15.5 ounce) cans chick peas (garbanzo beans), rinsed and drained
2 tablespoons olive oil
3 garlic cloves, crushed
4 teaspoons curry powder
6 tablespoons fresh lemon juice
1/2 cup water
salt, to taste
hot sauce, to taste

Directions

Put all ingredients in a food processor and blend until smooth. Serve (drizzled with olive oil, if desired) with pita chips.
