Three Cheese Spread

Chèvre cheese adds dimension to Parmesan and cream cheese in this easy party spread that's perfectly suited to crackers or bread.

Yield

18 servings (2 tablespoons spread and 3 bread slices each)

Ingredients

1 (8 ounce) package cream cheese
1 (6 ounce) package chèvre (goat) cheese
1 cup shredded Parmesan cheese (4 ounces)
1/3 cup chopped fresh basil
1/4 cup diced red bell pepper
sourdough cocktail bread slices or crackers

Directions

In food processor, process all cheeses until well blended. Add basil and bell pepper; process with quick on-and-off motions until finely chopped and well blended. Cover; refrigerate at least 2 hours or until firm.

Spoon cheese mixture into 3 (1-cup) ramekins or 1 (3-cup) bowl. Serve with bread slices.

Additional Information

You can use 1 teaspoon dried basil leaves instead of the fresh basil.

Add a flavor kick to one of the three cheese bowls by stirring in red pepper sauce, a drop or two at a time to taste. Label the bowl as "spicy" so as not to surprise guests.
