Almond Cheddar Spread

Toasted almonds adds a nice crunch to this cheddar cheese spread.


2 1/4 cups


1 tablespoon butter or margarine
1/2 cup sliced almonds, toasted
2 cups (8 ounces) shredded Cheddar cheese
1/4 cup chopped fresh flat-leaf parsley
1/2 cup butter or margarine, room temperature
4 ounces cream cheese, room temperature
1/8 teaspoon salt or to taste
2 tablespoons finely chopped sweet onion


Melt 1 tablespoon butter in skillet over medium heat, add sliced almonds and cook, stirring constantly, until golden and fragrant. Remove from heat and cool completely before adding to spread mixture.

Combine remaining ingredients in a bowl, blending well; stir in cooled, toasted almonds.

Spoon into serving dish and serve with assorted crackers.


Store in the refrigerator.
